The International Agency for Research on Cancer IARC upset meat lovers everywhere when it ignored the health benefits of consuming nutrient-rich red meat and the weight of scientific evidence, classifying red meat as a probable carcinogen. Chance, bias, and confounding could not be ruled out…for the data on red meat consumption, since no clear association was seen in several of the high quality studies and residual confounding from other diet and lifestyle risk is difficult to exclude. The Working Group concluded that there is limited evidence in human beings for the carcinogenicity of the consumption of red meat. There is inadequate evidence in experimental animals for the carcinogenicity of consumption of red meat and of processed meat. And most importantly, because red meat is consumed in the context of hundreds of other foods and is correlated with other behavioral factors, it is not valid to conclude red meat is an independent cause of cancer. In the case of red and processed meat, the overall scientific evidence simply does not support their conclusion.

Red meat is muscle meat that comes from mammals. Examples of red meat include hamburgers, steak, ham, sausage and pork. White meat in the current research includes all poultry, such as chicken, turkey, duck and goose, among others. Both red meat and white meat can be either processed or unprocessed. Processed meat is any meat which has undergone processing. There are many forms of processing, but the most common include smoking, curing, salting and chemically preserving.
These are things where IARC thinks there is sufficient evidence that they really do increase cancer risk. But some may increase by a lot, some by a small amount. Of lifetime non-smokers in the UK, around 1 will get lung cancer. For smokers of a pack a day, more than 20 will get lung cancer. Again in the UK, about 6 people in every will get bowel cancer in their lives.
A report in late October on the potential cancer-causing risk of red and processed meat by an arm of the World Health Organization—as well as its subsequent clarification —has continued to stoke debate and discussion since its release. We asked Aurora Saulo, PhD, a professor and extension specialist in food technology at the University of Hawaii at Manoa, for her expertise on what the report means and what we all can do about it.
