One of our Cancer Prevention Recommendations is to eat no more than moderate amounts of red meat, such as beef, pork and lamb, and eat little, if any, processed meat. This Recommendation is not to completely avoid eating meat. Meat can be a valuable source of nutrients, in particular protein, iron, zinc and vitamin B

You may have seen news stories about the links between red and processed meat and cancer. These meats can also be high in calories and fat, which can contribute to weight gain. Red meat refers to all types of meat from mammals, such as beef, veal, pork, lamb, mutton, horse and goat. This includes foods like steak, minced beef, pork chops and roast lamb.

Aim for no more than about three portions a week, which is about —g cooked weight or —g raw weight a week. A medium steak is about g cooked weight and 3 slices of roast beef or pork is about 90g cooked weight.

If you do eat red meat, cutting down can help protect against bowel cancer. Processed meat has been smoked, cured or had salt or chemical preservatives added rather than having just been cooked or reformed like most sausages and burgers.

This includes bacon, salami, chorizo, corned beef, pepperoni, pastrami, hot dogs and all types of ham. We recommend eating very little, if any, processed meat because there is strong evidence that it is a cause of bowel cancer and can be high in fat and salt.

If you eat meat, it's best to choose unprocessed meat. Researchers are still investigating how red meat causes cancer. One possible way involves a compound called haem, which contains iron and gives red meat its colour. Haem can trigger the formation of cancer causing compounds which have been shown to damage the lining of the bowel, which may cause bowel cancer. Processed meat, as well as predominately being made from red meat, contains added nitrites and nitrates, which can also be digested to form compounds that are thought to cause cancer.

Colorectal cancer is the third most common malignancy worldwide and the fourth most leading cause of cancer deaths. Colorectal cancer has become a real public health issue in both developed and developing countries Ansa et al. Several risk factors are associated with colorectal cancer such as obesity, smoking, alcohol, advanced age and high intake of red and processed meat Nasrallah and El-Sibai, [ 19 ]. High incidence of colorectal cancer risk factors including red and processed meat has been reported in different countries such as Jordan Tayyem et al. Numerous studies have demonstrated that high intake of red and processed meat could be linked to an increased risk of colorectal cancer Bernstein et al. In addition, carcinogenic compounds such as heterocyclic aromatic amines, N-nitroso-compounds, and polycyclic aromatic hydrocarbons are produced when meat is cooked at high temperatures Domingo and Nadal, [ 10 ]. High intake of red and processed meat has been also linked to an increased risk of several cancers.

Red meat is muscle meat that comes from mammals. Examples of red meat include hamburgers, steak, ham, sausage and pork. White meat in the current research includes all poultry, such as chicken, turkey, duck and goose, among others. Both red meat and white meat can be either processed or unprocessed. Processed meat is any meat which has undergone processing.

Did you know that eating more than grams raw weight of red meat a week increases your risk of bowel cancer? Or that the risk of developing bowel cancer goes up 1. Eating processed meat increases your risk of bowel and stomach cancer. Red meat, such as beef, lamb and pork, has been classified as a Group 2A carcinogen which means it probably causes cancer. Current research shows that there are certain chemicals in red and processed meats — both added and naturally occurring — that cause these foods to be carcinogenic. For example, when a chemical in red meat called haem is broken down in the gut, N-nitroso chemicals are formed and these have been found to damage the cells that line the bowel, which can lead to bowel cancer. These same chemicals also form when processed meat is digested.
